First of all, Happy Easter!
I’ve made zucchini bread before and I don’t like to brag but it’s a crowd pleaser. My friend knew that I was craving for it and would bake one; she insisted that I mail it to her.
Ingredients:
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
3 eggs
1 cup vegetable oil
2 ¼ cup sugar
3 teaspoon vanilla extract
2 cups grated zucchini
Directions:
- Preheat oven to 325 F
- Grease and Flour the baking pan (8x8x2) or loaf pan
- Sift the dry ingredients (flour, salt, baking powder, baking soda, & cinnamon)
- Beat the eggs, then incorporate the vegetable oil, vanilla extract, & sugar
- Mix together the dry ingredients with the wet ingredients
- Stir in the grated zucchini
- Pour the batter into the pan
- Bake it for 50-70 mins (please bear in mind that every oven is different so might as well check it once in awhile and get a tester; if it comes out dry then the bread is ready)
- Let it cool for 20 mins.
- You can serve it with your favorite fruits.
- Also nuts are optional, you can add a cup of your desired kind of nuts. I used walnuts and almonds before and they came out great.
