Happy Memorial Day!
The usual celebration calls for barbeque, watermelon, lemonade, and a parade honoring the military that have defended the lives of Americans. Here is a classic American dessert, chocolate chip cookies.
DoubleTree is a hotel franchise of The Hilton and their chocolate chip cookies are sought after. These cookies are crispy on the outside and soft inside. The perfect bite is usually after baking them and cooling them down after 30 minutes, but the recipe calls for an hour of cooling! But if you’re like me, I just couldn’t wait!
Here is the recipe with some small adjustments since I don’t have a stand mixer; but you can see Hilton’s page here: https://newsroom.hilton.com/static-doubletree-reveals-cookie-recipe.htm
Ingredients:
(Dry)
2 ¼ cups flour
1/2 cup rolled oats
1 teaspoon baking soda
1 teaspoon salt
Pinch cinnamon
(Wet)
½ pound butter, softened (2 sticks)
¾ cup + 1 tablespoon granulated sugar
¾ cup packed light brown sugar
2 large eggs
1 ¼ teaspoons vanilla extract
¼ teaspoon freshly squeezed lemon juice
(Mix-ins)
2 2/3 cups semi-sweet chocolate chips (Nestle Tollhouse was recommended but I used Guittard instead since I couldn’t get the Tollhouse, 2 bags are needed for this recipe)
1 ¾ cups chopped walnuts
Directions:
- Incorporate all the dry ingredients together, then put aside
- Mix the butter, sugar, and brown sugar in a bowl with the hand mixer for about 3 minutes
- Add the egg, vanilla and lemon juice for about 1 minute, then increase the speed for about 2 minutes or until fluffy
- Add the dry ingredients by batches, but don’t over mix
- Fold in the mix-ins, chocolate chips and walnuts
- Line the baking sheet with parchment paper and place the cookie dough 2 inches apart from each other
- Bake at 300°F for 20-23 minutes until edges are golden brown
- Cool for about 1 hour or until you can control your craving… well, I wasn’t able to wait for an hour!
Hilton’s cook’s note: “You can freeze the unbaked cookies, and there’s no need to thaw. Preheat oven to 300°F and place frozen cookies on parchment paper-lined baking sheet about 2 inches apart. Bake until edges are golden brown and center is still soft.”
Extreme Cravings fulfilled!
