Baking banana breads has been a staple during this time. It is a way to use the bananas that have been ripened, some would bake them inside the oven to expedite the process. I modified the recipe from Delish. (https://www.delish.com/cooking/recipe-ideas/recipes/a50825/best-banana-bread-recipe/)
Ingredients:
(Dry)
2 cups all purpose flour
1 teaspoon baking soda
½ teaspoon salt
(Wet)
½ cup or 1 stick of melted unsalted butter
1 cup granulated sugar
1 large whole egg with an additional 1 egg yolk
¼ cup sour cream
1 teaspoon pure vanilla extract
3 mashed ripe bananas
(Mix-ins)
½ cup dark chocolate pieces
½ cup chopped walnuts
Directions:
- Mix together all the dry ingredients, set aside
- Mash the ripe bananas, but not too much
- Incorporate all the wet ingredients together
- Add the mashed bananas into the wet mixture
- Combine the dry mixture in batches
- Fold in the mix-ins, but set aside a tablespoon of both mix-ins as toppings
- Grease the loaf pan before pouring out the mixture
- Bake for 350°F for 50-60 minutes, do the toothpick test to know if it’s ready
- Let it cool for 10 minutes
Viola! It came out really great! I think dark chocolate was a good adjustment.
