I have this extreme craving for scones. I miss going to a bakery and having an array of scones to choose from. I wish I could go to Bouchon and get the bacon and cheddar scones; or to Birch coffee to get their cheese and chives scones. With this super intense craving, I had to scour the internet for a recipe to try while bearing in mind the limited ingredients that I have in my pantry. I came across a recipe from joyofbaking.com and it suggested some substitutes. Thank you Ms. Stephanie Jaworski! Let’s see if this works!
Ingredients:
2 cups of sifted all purpose flour
1 tablespoon granulated sugar
1 ¼ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt (I used pink Himalayan salt but original recipe called for Kosher salt, but I will suggest adding a pinch more might be better)
½ teaspoon ground black pepper
½ teaspoon ground paprika
6 tablespoon cold unsalted butter, diced
½ cup grated cheese (parmesan & cheddar)
¼ cup grated bacon
2 tablespoon chives (I used green onions as a substitute)
½ – 1 cup buttermilk (I used 1 cup milk with 1 tablespoon lemon juice as suggested by Ms. Jaworski)
on top of the scones: cream
Directions:
- Preheat to 400 F
- Oil the baking pan
- Mix together the dry ingredients: flour, baking soda, baking powder, salt, pepper, and paprika
- Incorporate the cold butter into the flour until it becomes coarse crumbs
- Mix the cheese, bacon and green onions into the mixture
- Add the milk ½ cup first and then add more if needed; the dough should not be over mixed
- Knead the dough gently over flour
- Cut the dough to your desired shape, I used a round shape cutter
- Brush the top with cream and sprinkle more cheese
- Bake for 18 minutes and constantly check if they are done
- Let it cool
I would say that it needed a pinch of salt more, but they were still yummy! I am not sure if it’s because of the salt substitution. But, it was better when salted butter was spread all over it, as my sister suggested.
So, Extreme Craving satisfied!
