This is to celebrate all the mothers out there. Mother’s day will be quite different this year. We won’t be having special brunches with our beloved mothers and go shopping afterwards. Some will miss going to the spa to pamper themselves.
Mother’s Day 2020 would be more of FaceTime/Zoom calls, flower deliveries, and cake baking!
Chocolate Cake:
Ingredients:
(Dry)
1 cup cake flour
1/3 cup cocoa flour powder
1 cup sugar
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
(Wet)
2 large eggs
½ cup full cream milk
¼ cup oil (vegetable or olive oil)
1 tablespoon vanilla extract
1 tablespoon white vinegar
(Coffee mixture)
1 teaspoon instant coffee
½ cup boiling water
Directions:
- Preheat oven to 350 F
- Sift all the dry ingredients then mix them all
- Incorporate all the wet ingredients to the mixture one by one except the white vinegar
- Mix the coffee with the boiling water then pour over the mixture
- Finally, add the white vinegar
- Pour the mixture over to cake pans
- Bake them for 20-25 minutes (check if ready with a tester)
- Let them cool
Coffee Cream Frosting:
Ingredients:
(Meringue)
2 egg whites
1/8 teaspoon salt
1 tablespoon sugar
1 tablespoon instant coffee
(Coffee caramel)
½ cup water
1 tablespoon instant coffee
¾ cup sugar
¾ cup softened butter divided into smaller pieces
Directions:
- Whisk the 2 egg whites
- Add the salt, sugar and coffee until the mixture is thick
- In a sauce pan, boil the water and add the coffee and sugar (bring it to a boil for about 2 minutes)
- Pour the hot coffee caramel to the meringue mixture
- Let the mixture cool down before adding the softened butter gradually
- It will take a good amount of time before it will curdle then it will become smooth
Decorating the cake:
- You can do whatever you want
- I have added some walnuts
- You can also make a sign, “happy mother’s day”
It turned out so great! I am very proud of the cake and would not hesitate to give it to my mom! Happy Mother’s day!
